Berry Vanilla Yoghurt Iceblocks Recipe
- 2/3 c water
- 3/4 c sugar
- 3 1/2 c blackberries (it would work well with any berries - use frozen if you don't have fresh)
- 1 c vanilla yoghurt (the original recipe asked for natural but we didn't have any)
- 1T fresh lemon juice
Method
1. In a saucepan, combine the water and sugar. Slowly bring to the boil and allow to simmer for a few minutes. Turn off and allow to cool.
2. In a food processor, puree the berries, and then pass through a sieve to remove the seeds. Try to press as much of the pulp through the strainer as possible (you will need about 2 cups).
3. In a jug combine all the ingredients. Stir well and then pour into iceblock moulds.
4. Place in the freezer over night.
