Mediterranean Chicken Pizza with Basil

McCormick’s have bought out a new range of ‘Grill Mates’ which is essentially herbs and spices to compliment your meal.
I’m a fan of herbs and spice combos because they help turn a drab dinner into something with a bit more bang.
We tried the Mediterranean Chicken Grill Mate which was absolutely delicious and something different to anything we’d ordinarily have.
Anyone who reads this blog will already know I have a bit of a love affair with pizza, good quality pizza, home made pizza.
Mediterranean Chicken Pizza Recipe

Ingredients
  • 1 red capsicum, deseeded and sliced
  • 2x 30cm gourmet thin ready-made pizza bases
  • 2x 250g skinless chicken breast fillets, trimmed and sliced
  • 1 red onion, peeled, halved and sliced
  • 250g (1 cup) tomato pizza sauce
  • 1tbsp olive oil
  • 2 tbsp Mccormick Grill Mates Mediterranean Chicken
  • ½ cup fresh basil leaves
  • 500g (2 cups) grated mozzarella cheese
Instructions
  1. Preheat BBQ or oven with a hood to 200° C or a fan forced 180° C
  2. Mix McCormick Grill Mates Mediterranean Chicken seasoning, oil and chicken fillets in a large bowl and coat very well.
  3. Put pizza bases onto 2 greased pizza trays. Spread tomato sauce over the pizza bases and top with the chicken, mozzarella, red onion and capsicum.
  4. Cook for at least 20 minutes, till cheese is melted and the base is crispy and golden.
  5. Remove from oven then sprinkle with basil leaves.
  6. Serve warm and cut into wedges.
